Persian cuisine, one of the world’s oldest culinary traditions, is deeply rooted in the heritage of ancient civilizations. Over the centuries, it has evolved and left a profound influence on modern cuisine.
Today’s Persian dishes feature a harmonious blend of meat, vegetables, nuts, and dried fruits, often served with rice or bread. Signature spices like saffron, turmeric, cinnamon, cardamom, black pepper, and dried lime give them their unique, aromatic profiles.
My approach to Persian home-cooked meals combines ancient recipes with locally sourced ingredients and contemporary cooking methods. I’m starting with three iconic stews: Gheimeh, Ghormeh, and Fessenjoon, whose names you may recognize due to Persian influence across the region. Each stew is distinguished by both its taste and its vibrant color: the rich red Gheimeh, thanks to tomatoes; the vibrant green Ghormeh, brimming with fresh herbs; and the deep brown Fessenjoon, enhanced by walnuts and tangy pomegranate sauce.
